Reliving a childhood dish

I had something I have not had in a long time (high school, I guess.) My mother was divorced raising two boys on her own. Since she worked, she need fast, easy, and filling recipes for a couple of growing boys who would consume a half gallon of milk daily. So, I feasted on these quick, tasty foods which I rarely eat anymore.

Sloppy Joe Cupcakes.

Get a tube of Pillsbury biscuits. Take each one and press it into the bottom and sides of a muffin tin.
Make sloppy joe mix (your favorite).
Place about 2tbspns of mix into the center of each biscuit.
bake until biscuits are done. top with favorite cheese and melt.

Viola![sic] Dinner is served. It's a really bad-for-you treat, but MAN did it taste good.
