Help!
To give you future ideas... right now I'm making pork chops quick and easy...
Took some boneless chops, put 'em in a pan with olive oil for 20 mins or so, turning from time to time, emptied out the liquid and started browning them. after a little while (when they're pretty much cooked and edible), dump a can of cream of mushroom soup over them and let it thin out some. I think the recipe is actually on the back of the can of soup, but with chicken instead of pork chops.

Preheat oven to 350.
Put a skillet (oven safe) and put it on a burner medium high heat.
Take a couple of chicken breasts. Drizzle them with olive oil and fresh lime or lemon juice. Salt, pepper.
Seer on top side until nice and brown (3-4 minutes). Flip. Seer on second side (3 minutes).
Stick the whole thing in the oven for 10 minutes.
Take it out and let the breasts rest (if you can control yourself, that is, BO.
)
Slice on a bias and serve on a warm plate. You can put BBQ sauce, salsa, ranch dressing, or whatever on top of the chicken. It will all taste good.

Well, J4H's recipe was a success! The only complaint was from my mother who didn't like the cayenne pepper, but overall everyone liked it. Served with fresh green beans simmered in butter, Goya Adobo seasoning and salt, it was a pretty darn good meal. I'm now supposed to make it again next week when my great uncle comes into town. I could not believe how much it made, either! Coming from J4H, I was worried it was intended more for two people, but that recipe could easily feed 6-8 people.
As far as prep goes, it was fairly easy, though it was a bit stressful because everything has to be done simultaneously. Not being one who cooks all that often that was a little rough, but not all that bad in the end.

I always keep the fixings for homemade mac & cheese on hand...and usually make a crapload of it, it's good leftover too.Jacobs4Heisman wrote:Sweet -- it's hard to go wrong with homemade Mac and Cheese.
