As far as making this post relevant, I've been mulling over this recipe for white cheese dip (like that found at many sit-down Mexican restaurants) and am wondering if any of you guys have messed with it, or something similar:

Sounds good...not sure if I can find that cheese they call for though. If I can find the cheese I'm going to give this a whirl, I do love that stuff. Although I can see myself adding more chiles to it than that :)

I picked up some fresh jalapenos at the store, but couldn't find the cheese. I might just try it with the monterey jack or white american they list toward the bottom, but then again, I've got a mexican grocery on every corner here, I might venture in there, too. :wink:

I remember buying some cheese at the Perrysburg/Rossford/whatever it is on Rte. 20 Meijer that made a tasty Mexican restaurant type cheese dip. I'll be darned if I can remember what it was called.

An interesting twist I think I'm gonna work is trying Pepper Jack cheese. Not entirely sure how it will work, but it seems like it should be a good start, Monterey Jack with jalapenos already in it... add a few more peppers and I should be good to go. Didn't grab half-and-half at the store, though... I guess my plan is on hold.

In related news, I've come to terms with the Colts playing in the Super Bowl upon seeing the ridiculous beer and junk food deals at Kroger down here.
