Quick and tasty side dish (Mexican style)

I use this for standard Mexican dishes, but also as the "bedding" for grilled pork and chicken breast. I've also matched it with ribs and thought it went very well.

Frozen sweet corn and canned black beans, rinsed. Mix with fresh cilantro, lime juice, a bit of tequilla and some butter. Mix in roasted garlic (a bit of chipotle powder may be used, also). Microwave on medium-high about a minute or so, being careful not to suck the life out of the corn.

Our Giant carries this nifty cilantro paste, which I use pretty often. It's not as good as fresh cilantro, of course, but it's awfully convenient.
