Noah and I love Fiesta Chicken!

Noah and I try to cook dinner together once a week. We have two favorite Mexican dishes, including Fiesta Chicken. It's quick and easy!
1 box of Yellow Rice
3 or 4 boneless chicken breasts, partially thawed
2 cans black beans, rinsed
1 really large jar of salsa
1 big honking bag of finely shredded cheese, preferably a mixture of cheddar and Jack
Prepare the rice as per the directions.
Cut the chicken into strips (easier to do when its partially thawed), then rub it down with your choice of spices. No need to overdo it here, especially if you get tasty salsa. We usually use garlic powder, black pepper and cumin. Broil the chicken.
In a baking dish, cover the bottom with the rice. Then layer the beans on top. We've also used our bean/corn side dish here. Lay the chicken strips evenly across the top. Smother with the salsa - we've been using the Giant store brand salsa (Essensia, I think is the name), in particular their chipotle style. Very tasty. Tip - use a chunky style of salsa and drain a fair amount of the liquid before pouring it.
Bake in a 350 oven for about 10 or 12 minutes. Smother the top with the cheese, then bake until the cheese is just starting to brown. Sloppy to scoop out, but very tasty! Serve with source cream, guacamole and tortilla chips (unsalted blue corn chips are a favorite here).
