Yogi Tea is my favorite drink! I had this in Austin, Texas after a yoga class and my life has never been the same! It is similar to chai...but much, much better. I hope you enjoy it!

To make two quarts:

* 2 quarts water
* 15 whole cloves
* 20 black peppercorns
* 3 sticks of cinnamon
* 20 whole cardmon pods (or 2 tsp. cardmon powder)
* 8 ginger slices (1/4" thick, no need to peel)
* 1/2 teaspoon black tea leaves
* Milk and Honey to taste

Bring 2 quarts of water to a boil in a 3-4 quart pot. Add cloves and boil for one minute. Next, add cardamom, peppercorns, cinnamon, and fresh ginger root. Cover and boil for at least 30 minutes. For best flavor, cover and simmer for 2 to 3 hours! When ready, remove from heat, add black tea and let cool. Strain tea. When ready to drink, add soy or dairy milk and sweeten to taste with honey or maple syrup.

OK, I'll set this one up on the stove before my next Tai Chi class, and it should be good to go when I get back. I hope it doesn't change my life too much!!

Oooooh. Looks good. Have you made a batch and kept it in the fridge for extended periods? How does it do flavor-wise?

I absolutely love my yoga classes. I'm going to start taking 2-3 classes per week starting next month. Can't wait!

I've believe I've had a batch in the fridge for no more than two weeks. Flavor stays wonderful! The only issue is the settling at the bottom. You have to shake it up each time you get ready to heat up a cup.

It's getting to be that time of yeat where I make it every Sunday! LOVE the fall!
