crock pot chicken and salsa

MILD salsa

4 tomatoes
1 green pepper
1 red pepper
1 section of a clove of garlic
small sweet onion
salt/pepper
tobasco to taste

Chop ingredients or if you aren't good with a knife, like moi, put everything in a food processor and let er rip. I did keep mine a bit on the chuncky side, just like my waist line.

I also heated it over a low heat to eat with chips. Add celantro or jalepenos to taste.


Crock pot chicken

4 boneless chicken breasts
16 oz of salsa (see above)
1 can stewed tomatoes with onions (I have a huge crock pot so I had to add something to cover all the chicken)

Put chicken into crock pot and pour salsa over. cook on low 5-6 hours. Serve with soft tortillas. I also put it on a lightly toasted bun for a sandwich for leftovers.

Did I tell you that Mardi Gras is going to be the theme for Reagan's birthday party?

Muffuletta sammiches and traditional red beans and rice (made with real andouille and dried beans). The red beans and rice will take me about a day to make.

Can't wait!

Poboys? is that what you're talking about? I was way down south thar but our part of little paradise called 'em poboys.

Red beans and rice is a good choice. What about white beans and rice? We eat that (Troy won't eat the red beans). -- he's not much of a cajun eater! ;)

You should have come over to get some authentic mardi gras decor... we still have a box or two!!!

Muffuletta. Not PoBoys. I ain't buyin' seafood for a bunch of freeloaders. Muffulletta is basically a ham and salami on white with a tapanade (olive stuff).

I would love to be the next Rachel, but I don't think I can make my mouth go like that. :mouce:

I always hold the philosophy that small children's birthday parties are just as much for the adults as it is for the kids. The menu is for the adults. The curtain climbers are getting hot dogs (called po-boys).

The best thing I have ever made for a kid's birthday party is Kiddie Sushi.

You take fruit roll ups;
Make the rice krispie marshallow mixture;
Then you put the marshallow stuff on the fruit roll ups;
Put gummi worms inside
Then roll it up & slice it.

Looks just like sushi & the kids & grown-ups alike love it.
