Stuffed Peppers

Well the pepper plants in the garden have been falling over with so many peppers on them, so it was time to pick a bunch of them and make some stuffed peppers. I put a bunch of them in food saver bags and froze them, but the ones I cooked I did on the grill. Indirect with a hunk of cherry wood for some smoke. OMG, they turned out wonderful. I've always done them with tomato sauce in the oven/crockpot before, but this was so much better.

For the stuffing I used 1# of Ground Beef and 2# of Hot Bob Evans Sausage. I diced up a couple onions, green peppers, banana peppers, jalapenos, and some garlic & cooked all that with the meat. Drained the meat and added a couple cups of cooked rice and 3 cans of diced tomatoes with green chiles. Added some shredded mozzarella cheese, and stuffed 'em. Turned out very good.

Of course I took some pics too, just for BO since he thinks I'm weird :)

I made my quick & dirty peppers as an appetizer (similar to your atomic buffalo turds) for friends. I just take really good goat cheese, stuff big sweet peppers and wrap them in bacon. After everything gets good and crisp, I slather it in BBQ sauce. Once it's carmelized, they get served and don't last long.

Mmm, mmm, good.
