Sorry guys, no food porn, but I figured I'd share tonight's dinner with ya'll anyways.
I decided to grill up some pizza for the first time this year, and it turned out awesome as always. I used Raichlen's pizza crust recipe from How to Grill. I've used this crust at least 10 times, I really like it.
For toppings I made one that was a standard pepperoni, onion, tomato sauce, and cheese.
The second one was a little more involved. I grilled some chicken thighs and also roasted a bulb of garlic on the grill. While that was going I put together a quick pesto sauce with fresh basil, garlic, olive oil, parmesan, and a little salt & pepper (didn't have any pine nuts). Then when I put the pizza together it was the pesto sauce, roasted garlic cloves (left whole), chunks of the chicken, and some whole fresh basil leaves.
FYI the procedure for grilled pizzas that I use is also out of Raichlen's book:
Roll the dough into a rectangle. Build the charcoal fire with all the coals on one side. Place the raw dough directly on the grate over the coals. When the crust blisters and the bottom is brown pull it off and flip it over. Put the sauce and toppings on the browned side of the crust and place the pizza on the grate away from the coals. Cover and allow the cheese to melt, and the bottom of the crust to brown. Pull off and enjoy!
You haven't had pizza until you've had it fresh grilled. So freaking good!
