My bf mentioned corned beef yesterday and that's like starting a forest fire, so I figured I'd share my Sunday afternoon with ya'll.
1 corned beef brisket
2 bottles beer, not light
4 crushed garlic cloves
caraway seeds
pickling seed
1/2 cup whiskey
Put all that into a large pan, one with a lid is best. I used Sam Adams Octoberfest and Jameson whiskey, but play around with it.
Braise the brisket in the oven at 250* for 3 hours, turning once, keeping covered to prevent evaporation. I didn't have a pan with a lid so I had to add 2 more bottles of beer and some more Jameson to keep it from drying out after 3 hours.
At the three hour mark, add carrots and potatoes, then toss it back in the oven for another 2 hours.
I'm going to go clean up in the kitchen, before I manage to eat a 3 lb. corned beef by myself.
