Mother's day dishes

So I'm back again, begging and pleading for recipes from the resident foodies here on AZZ.com. Granted, the last time I was doing this same thing was probably about two years ago, which coincidentally was probably the last time I cooked. Thanks for that chicken macaroni and cheese recipe, btw. :wink: I really do love cooking, but I just don't really have the opportunity to do it very often.

Anyhoo, I'm thinking about taking over the cooking duties for mother's day, if I can find something that I can make. My family usually just grills out this time of year, but I'm thinking that there has to be something a bit more creative than pork chops (yet still relatively easy) that would be seasonally appropriate. I'm just throwing this out there in case anyone has any ideas that I might be able to utilize, and that others may benefit from.

But please remember that you are working with a culinary simpleton here. :P

I say start the day off right...breakfast in bed.

2 Eggs, Scrambled
1/4 or 1/3 cup salsa (Depends on how much salsa you want)
1/3 cup shredded cheddar
2 to 4 Tbsp. Sour Cream

Cook the eggs and right when they are finishing their cooking, throw the cheddar cheese on top. After about 20-30 seconds, turn the heat off and put the salsa on top. Let it sit for a minute and then transfer to a plate and put the sour cream on top. Delicious.

No no no - BO's mom had breakfast in bed over at my place. He needs to cook her dinner.

Sorry I'm late to the party. I made my wife and mother a brunch of herbed mushroom quiche, stuffed french toast, hashbrowned potatoes and apple smoked bacon.

Pretty good. All of the above recipes can be found - in some form or another on epicurious.com.
