Labor Day = busy cooking weekend

Post by 1987alum »

This is the last football-free weekend until November and we'll be hosting at least two (probably more) gatherings.

Saturday will be ribs. I'm not sure if I'll be able to pull it off, but I was hoping to do at least one of the racks with my homemade teriyaki sauce. Just not sure if I'll have the time to make that. Hoping to make one of my favorite appetizers - grilled stuffed pablanos.

Mrs. 87 is keen on making potatoes, so I have two recipes I'm considering - one for crunchy potato cubes and another for potato cakes. I just don't like baked potatoes with cookouts.

Now Monday will likely be just burgers and dogs. The only real effort there will be pickled cucumbers and, if I'm ambitious, whichever potato recipe I don't utilize Saturday.

Good eatin' this weekend!

That's what I thought the first time I saw a recipe. But, now, these aren't the Vlasic pickles you know and love. More like a very bright, fresh cucumber salad. Yummy!

As expected, lots of cooking this weekend, which made it an awesome weekend in my book!

Menu highlights ...

Saturday
Stuffed pablanos
Baby back ribs
Panko oven fries

Sunday
Angel hair pasta with black bean & ginger sauce

Monday
Pickled cucumbers
Yellow watermelon mojitos

Sadly, the schedules get crazy now, so Mrs. 87 & I will be relegated to scrambling to keep everyone fed!
