Boca Negra

Dinner party last night and they put me in charge of dessert, so I made my famous Boca Negra, which was neither famous, nor ever made by me, BEFORE last night. Now it is famous (not infamous) and deservedly so. It was truly awesome.

A flourless chocolate cake (which is to say that the body of the cake is basically all chocolate-not tht that's a bad thing). 1/2 cup of JB bourbon (OK, I cheated-more like 3/4 but stick to half-I had to cook it almost twice as long as it called for). Then a white chocolate cream topping, also w/bourbon.

If you use a food processor this should be pretty easy- I didn't and stirring all that melted chocolate gave me some pretty stiff forearms today but well worth it.

Recipes I've seen are almost all identical-comes from a Julia Child's recipe. Google Boca Negra recipe and you'll find it. I added more cream to the white chocolate sauce and made it a little more liquid because I could serve it warm that way. The pictures I've seen show it stiff, more like a whipped topping.

Dinner was an incredible lasagna with pine nuts and peppers. Very different and easily better than any tomatoe based lasagna I've had. If you want to do a memorable dessert and like chocolate- I highly recommend the BN.

Oh wow, that sounds fantastic. I just bookmarked a recipe and will hopefully give it a try soon. Thanks for the suggestion!
