nice, bright (and quick) side dish

I tossed this together this weekend. I think it will be better as a summer cookout side dish, but it was nice enough, even in the dead of winter.

Tomatillo corn salad/relish

8 or 9 tomatillos, rough chop
2 cups corn (I used frozen corn, thawed, of course)
1 jalapeno, very finely chopped (no seeds/ribs as per Mrs. 87)
Small bit of very finely chopped red onion (maybe a tsp. worth)
Dash of salt & pepper
Juice of 1/2 lime
Heavy splash of olive oil

Mix, let sit for a bit and eat.

I was going to add some fresh garlic and/or herbs (cilantro, oregano), but this has a very bright, subtle taste just as it is.

Like I said, I'm looking forward to this as a side during grilling season!

Ha! I was just thinking of this (near-exact) recipe! Made it last summer, though a little different, using a recipe to mock Chipotle's corn salsa. Grilled the corn and used a carne asada marinade to grill a steak and make tacos.

6 Ears Sweet Yellow Corn
2 Poblano Chilies
Red Onion
2 Red Jalapenos
1/3 Cup Chopped Cilantro
1 Tablespoon Lime Juice salt and pepper to Taste

Think I only used about a third of the onion, but it wasn't too bad. And I'm not an onion person at all. The salsa in general was outstanding. Have pics, but I think they're on the home computer.
