How do you know that Auburn or even utah would have done any better? ESPN out of coaches poll
So, take the human polls completely out of the equations and use only a computer poll that all of the conferences can agree on to determine who the best teams actually are. I still think that some type of playoff could be constructed, however. Let the league champions duke it out while the rest play in post seaon bowls as a reward for their fine season. I don't know....anything would be better then what we have now.
No you don't just take conference winners. It would include the conference winners and At-Large bids as well in a tournament. So the polls would still be useful in ranking the At-Large teams into the tournament. Just like the basketball tourney, just fewer teams.

This way at least every single team at week 1 has a chance at winning the national chapmionship. Currently this is not the case. Without one there is no way to tell whether you were right in saying utah was "weak". There is no way to know that USC was better than Utah or Auburn. They probably were but that is purely speculation.

If a team wins their conference, they have a shot. That is more than what North Texas has right now. They have NO chance. NONE. Zero of winning a National Title.
Even if the At large selections favored the traditional powerhouse conferences, that doesn't mean a team like BG would be shut out. Even if they lost the conf. champ game after going undefeated with a quality non-conference sched, the would still have a shot, because the At Large selection would be more like the basketball at large picks.
For instance this season. If BG won all it's games, but lost to in the MAC Champ game to a solid team, AND Boise State won their conference and Wisconsin won the Big 10 after only losing to BG, then I think BG would get a serious look at an At large bid.
At least it would be a REAL champion that the NCAA would sanction and would be more equitable than what we have now. . (Yes that is right the NCAA doesn't sanction the college football championship in Div 1A and won't until they have a tournament.)
