Homebrew-Steam style beer

One of my favorite breweries is Anchor steam, so I figured my next brew would be in that style. I think I have finally settled on my recipie. The hop shortage actually made this a trying process. I had to go to three different stores (well same store, different locations) in order to get an idea of the hops available and what to use. Pretty much the only hops in lexington are Northern Brewer, Perle, and Challanger (which are pretty similar), and a couple packets (ie less than 5 between the 3 stores) of Saaz, Fuggle, hallertau, kent, galena and cascade. On top of that the Alpha Acid for many of these hops is less, 1% or so, than the listed range. Due to this I have had to tweak the recipe a couple of times, but here is what a plan to use.

1#, Crystal malt 60L
6.6#, Muntons Light malt, liquid (Just don't have the time, or lack of kids to spend doing my own mash. I like the ease of pouring in the malt extract)
First Flavor 60min: 1oz Challanger
Second Flavor 30min: 1oz Chanllanger
Aromatic: 1oz Fuggle
Wyeast: 2112 California Lager


This should give me a SG of 1.051, Finishing 1.012 (5.1%). Bitterness should be about 39.5 IBU. I went with the Challanger hops, because they should give the beer some spicy characteristics (I also don't really want the evergreen/mint overtones of Northern brewer). Fuggles were the best finishing/Aroma hops available, but I think they will blend well with the Challanger hops.

Californina lager has a range of 58*-68*. I keep my house between 66*-70*, so I think by wrapping a wet towel around the fermenter I should be able to keep a good temperature (plus had some moisture to my house).

Pitched the yeast. My SG is a little lower than planned 1.046, but pretty close. The wort is very smooth. Has a very nice amber color to it.

Sweet man! I hope it goes better for you than my last batch did. I really need to get another batch brewed, but I'm such a wuss in the cold, and I don't have any indoor brewing equipment.

We brewed a steam style beer once as well. It came out pretty good. Hope yours does as well!
