Thanksgiving Yuminess

So I am doing Thanksgiving this year and am already planning my foods. Don't want to leave anything out, so I thought I'd check on everyone's favorite Thanksgiving treats.

I know the usual turkey, stuffing, cranberries, so fill me in on any family traditions or delicious recipies. I know RUIT will have an opinion on this one...

Its all about the stuffing to me. If the stuffing is good, the meal is good. If you're making stovetop, then I'm not showing up :) I like Turkey, mashed potatoes, yams, etc, but the stuffing is the moneymaker :)

Redskin, skin-on Mashed Potatoes...I make these every year for my family's Thanksgiving dinner. They are always the first thing gone!

I am with you on the stuffing. Growing up in Ohio, my mom always made white bread stuffing. However, my Texan husband thought it was disgusting so I had to learn to make my own kind of cornbread stuffing. I make it with sausage, dried cranberries, green onions & pecans. My husband's family made this really gross soggy cornbread kind with boiled eggs in it. :vom: I had to change it up and we finally came to a happy medium!

There was a recipe in the paper yesterday for cornbread/sausage stuffing that I thought sounded outstanding, for someone that can't stand stuffing.

Of course, I forgot to steal the paper to keep the recipe.

I grew up with whitebread stuffing too, and it is far & away my favorite. I don't know what my grandma's recipe is, but I know it has lots of butter and is cooked in the bird. I know that stuffing the bird is evil in some corners, but it makes the stuffing SOOO much better. I'd be willing to throw away a turkey just to get the great stuffing, and cook a separate bird for eating.

Who am I to disappoint?

This has become my Turkey Day Signature dish

It's unbelievable.

I go over to mom's house for Thanksgiving. She cooks the bird and I do the sides and some desserts. I'm going to do a Fudge Walnut Tort for the big dessert. It takes two days to make but it's the best dessert ever!

I can definitely get behind any recipe that starts with a stick of butter and 3/4 cup of real maple syrup :)

Out of curiosity, do you use apple juice though? I know I would personally sub in season locally produced apple cider...but then I'm addicted to apple cider this time of year.

Sweet potato something... mashed is good, pie is good too.

Homemade apple sauce, corn, and mashed potatoes of both varieties are always prominent on my plate, since I have a freakish turkey allergy.

I used apple cider once in this dish because I didn't have the apple juice. I didn't like it as much as versions with the juice. I guess that with the grannies and squash, you really need the added sweetness of the juice versus the apple flavor of the cider. The maple syrup provided quite a bit of earthy sweetness and that is blanced by the juice with provides a bright sweetness. Combine that with a balanced spice offering and the dish is killer.

The alteration of the apple v squash is key for a beautiful presentation at the table. They should look like alternating fallen dominos.

This one side my mother does simply because she kicks my ass in it. It's mashed sweet potatoes with a pecan crisp crust. This is her siggy dish (other than the stuffing which I simply CANNOT emulate.)

My mother does this potato cheese pirogi type casserole that the entire family begs for at every major holiday or birthday. I can get the recipe if you are interested.
