Only had a few minutes of "me" time Saturday and decided to treat myself to an omlette.
Simple enough. Decided on the deconstructed spinach salad variety ...
Cubed some slab bacon to render down. As it did that, added some fresh minced garlic and, a bit later, some fresh sliced mushrooms. Whisked the eggs with a splash of whole milk (a habit I picked up as a kid, but never understood). After adding the eggs to the pan, tossed in the fresh spinach and a bit of crumbled feta. Just heat and fold from there.
With a bit of rye toast, coffee and red grapefruit juice, it was the perfect way to celebrate Saturday morning...
