Alright, it's been awhile since we've had any food porn around here. I used the last evening of my long weekend to make a Beer Can Chicken tonight, so here she is. Rubbed it down with Magic Dust BBQ rub, and inserted a lot of full garlic cloves under the skin. Stuck a beer can in it's ass and cooked it indirect on the kettle with a few chunks of hickory. I threw a few redskins on the grates along side the chicken too.

Fill a ziploc bag with some olive oil, garlic, sea salt, and a ton of halved (or quartered) redskin potatoes. Shake until coated, remove from bag, and place in crock pot on low for 6 hours. Delicious, and a great compliment to almost any meal.
I even prepare them like this when I am cooking a roast with other veggies in said crock pot. Sooooo good.

I speak of grandma's beef roast. There is nothing to it, but there is also nothing better.
