AFAIK, I hate beets. Does anyone have a recipe that can change my mind on them? I've got plenty of just-dug beets and don't want to waste them.

Roast them.

Clean and peel the beets raw. If you have large beets, cube them, otherwise leave them whole.

Toss with olive oil and a little salt. Roast uncovered -- here's where you have a choice. I like to do any root vegetable this way at about 425, but you can go 350. I think the higher temperature yields a little better carmelization. Test them after about 1/2 hour. Depending on the size it should take about 30-45 minutes.

By roasting you'll bring out the sweetness of the beet much more. Home grown beets are the best.

I'll sometimes make a roaste root vegetable medley this way using turnips, parsnips, carrots, sweet potatoes and onions.

There are two ways that I know of to make beets edible:

1) Pickle them. I don't have a recipe but my mom & grandma make them this way and they're pretty good.
2) Slice super thin (mandolin) and fry them to make beet chips. The sweetness makes for a pretty good chip, better than most potato chips, IMO.

With the Beets, you usually want to listen to them with Doug Funnie and Skeeter. They can tell you all the best songs and all the intricacies of their music.

I like beets pickled or roasted, however, I have an old family recipe for those that do not care for them.

1) get two bricks, cover in foil
2) place bricks in pre heated over at 425
3) wash beet, slice, seaon with salt and pepper
4) place sliced beet on one brick and place other brick on top of sliced beet
5) cook for a half hour
6) carefully remove everything from oven, remove foil from brick and use that to wrap up the beet and throw away
7) eat brick

Remember, this is only if you do not like beets.

Haha. Very nice. I think Doug and Skeeter would agree that Killer Tofu is their best song though.

Killer Tofu is great...

Lately though I have gotten into watching The Office and one day look forward to visiting Schrute Farms Beets. I hope to stay in the Irrigation Room.

Well, I've gotta tell you, I made the beets today and they were FANTASTIC!!!

We had two different varieties, one the traditional "beet red" beet, the other was a "bullseye" beet with pink and white flesh in concentric circles of color. Very pretty food!!

All I did was slice them up to between 1/8 & 1/4" thick... then I tossed them all with some EVOO and salt and pepper. Then I put them on the grill with the rest of the meal. After 5 or 6 minutes I turned them over and brushed the cooked side with some good balsamic vinegar. They probably cooked another 4 or 4 minutes and then I took them off.

I was HIGHLY skeptical, and let Maryellen try the first bite. She loved them so I followed with a bite of my own, and sure enough, they were delicious! Not at ALL like the beets I'd had in the past (pickled and/or creamed).

I'd say, give them a try that way if you have the chance!
