Grilling Season: Marinades, Rubs and Seasonings.....

Just wanted pick everybody's brain on the subject. I've been grilling chicken thigh's,legs and wings on the my charcoal weber grill like crazy ever since I moved out of the apt and into a friends house. I also experimented with a grilling salmon on a cedar plank. I'm trying to get some ideas for putting together a marinade or rub. I have a good brand of apple cider vinegar (Bragg)that I've heard could be used as a base for some stuff. Olive oil supposedly can be used as well. I have an small herb garden I'm trying to get going with some basil, oregano , rosemary, chives , cilantro and the like, but I will probably want to plant some more.

She's not my favorite, but anytime I can get a free cookbook, I'm all over it! This was a "gift" to XM/Sirius subscribers in May.

I don't have this exact book, although I've thought about picking it up a number of times. It's a good concept from the guy that is pretty much the authority on grilling/BBQ (IMO). For that matter if you are a griller at all and you don't have his "How to Grill" ORDER IT NOW. It is quite simply the best cookbook you'll ever own. Not only does it explain the basics of charcoal grilling, with recipe ideas on how to grill pretty much any food you can imagine, it is also chock full of amazing color photos showing you the steps for every recipe.

How to Grill is the one cookbook on my shelf that I will actually pull down and look through over and over again. I don't follow the recipes exactly very often (I'm not much on recipes) but the techniques that he describes are killer.

The thing with sauces, rubs, and marinades is that they're pretty much all a balancing act of sweet, salt, sour, and spice. With my experience with Raichlen's books I imagine this one will have some GREAT starting recipes...then if you want to tweak them to make them you're own you're golden.

Even if you don't get the sauces book, seriously consider "How to Grill"...every grill/BBQ fan should have that one on their shelf, IMO.

If you have an iPad.... Weber has an amazing grilling app for it... it's at least worth clicking on the link to see it in all its coolness, even if you don't have an iPad.

I have that book and use it all summer long. Fantastic recipes.
I love people who can laugh at themselves. It saves me the effort.
