I've been making a lot of guacamole this year. The more I make it, the easier it gets and the more I love it.
Guac is an amazing condiment.
It is when done properly.

It seems that 90+% of the Mexican places around Toledo (and there is about 1 restaurant for every 5 Mexican people in the Toledo area) make their guac in a food processor or blender. I HATE that. Throw all the ingredients in and turn it into a green paste. *blech* The texture sucks and the flavors all become one.

When I make it I do so with a knife, and then I mash the avocados with a fork. Biting into a chunk of tomato or onion is a good thing, IMO, and even having some larger chunks of avocado is very welcome.

The best restaurant guac around, IMO, is at Reverend's in BG. It's chunky and good...much better than the Mexican places in the area.

hammb - agreed. It's not supposed to be a paste. The crunch of a red onion or jalapenio or the texture of a tomato or avacado chunk all add something. I use a little wire masher on mine. Works great.

I once passed a stake to a friend of mine when he was putting up his tent, but I never had one offered to me in a restaurant. :-D

I'm about to spend the next three week craving a steak and surrounded by stakes. Off to Boy Scout Jamboree for me!

Speaking of stakes, is anyone a fan of "True Blood?" To me it is the only show or movie or book of the current craze worth watching.

My Fajita had unflavored chicken mixed in with onions [ok], peppers [ok], and yellow squash [wha?].

Their "refried beans" were canned black beans warmed up. Still whole. With the nasty black sediment mixed in. The rice wasn't even good by boxed standards. People thought this was the best Mexican in the area. Oh yeah? Well, how come I didn't see any Mexicans in the restaurant - just crackahs. NOT the sign of a good Mexican restaurant.

The water was good, on the other hand.
Yeah, just where I'd go to eat Mexican food.....a country club. BTW, those were probably Charro beans not refried beans.

It was close to charro beans, I suppose, except no bacon or pork fat, no tomatoes, no peppers, no garlic, no seasoning, and no salt. It had a little minced onion and that was basically it. But they ADVERTISED it as refried. *shudder*
