 Exactly!!!

The "chili" used at Skyline is a greek chili. I can't remember if there is cinnamon in it. I do know there is chocolate in it.

Anyone that just gets a bowl of Skyline Chili is bound to be unsatisfied. I would NEVER just eat a bowl of Skyline chili. The proper way is to eat it over spaghetti. I also like it over a baked potato.

And if you ever come to Cincinnati you'll find the locals argue over which is better, Skyline or Goldstar. Personal - Skyline hands down.

And if you get serious and want something only Cincy has.... go to Montgomery Inn.

Not having had Skyline chili, I find this whole conversation fascinating.

But one thing really puzzles me about the above post. Are you implying that people actually go to Cincinnati voluntarily? Are these people from Kentucky or what?

They built that bridge over the river so the folks from Kentucky could swim over in the shade....

I had Skyline once, and I was sick for the rest of the day. I had Packo's once, and although I didn't get sick (hence why it's better than Skyline), I was satisfied or impressed. To me, if I wanted a hot dog, I would just make it myself. I can put random crap on it at home as well. My friend raves over Packo's and how excellent it is (and for a hot dog, it's pretty good), but if I'm going to go out to eat I'll order something other than a hot dog.

MI is very good but I think IT'S overrated-like Packo's it would almost have to be due to the hype. Nevertheless, again-matter of taste. But I'll eat ribs just about anywhere-hard to get bad ones in my opinion.

Couldn't agree more. I'd rather make my own dog on the grill at home..... or enjoy one at the ballgame with a beer. However, I will get a spanish dog or kraut dog at the B & K Root Beer stand in Troy, OH (my hometown).... Nothing better. And a tall cold draft root beer in a frosted mug. To hell with Packo's and Skyliners.

Really!? Wow...

I'm a picky rib eater, but I find it nearly impossible to find properly cooked ribs. And in fact, even the local rib festivals are more miss than hit, in my book. It's all because of corners being cut (there is no way the ribs they serve to judges are what they serve to the people).

Ribs are not difficult, but they are time consuming to do properly. What I look for in a rib:

1. Smoke Ring -- And on ribs the smoke penetration should pretty much be all the way through the meat.
2. Tender -- They don't have to fall off the bone completely, but they should pull away from the bone easily, and leave the bone clean.
3. Sauce -- Preferably leave it off so I can add my own. If not please be a tangy/spicy sauce, and I like it on the thinner side...not a thick, goopy, sweet sauce like Sweet Baby Rays or most other standard BBQ sauces.

You can make Tender Ribs in the oven, or by boiling, or by smoking, so almost everybody has that part fine. What usually gets me is they don't have the smoke flavor that I love...or they douse it in a super sweet sauce that I don't like. I still love going to the local ribfests because when you do find that perfect rib it's like a little slice of heaven, but more often than not I'm not happy with what I get there, even.

I agree MI is overrrated. Their ribs are decent, there sauce is kinda of bland for my tastes.

Bu that's my point- YOU like the smoke flavor-others may not. YOU don't like cinnamon or beans in your chili, others may. Its just a matter of taste - I may prefer dry rubbed ribs over those slathered in sauce but you could throw Kroger's BBQ sauce an inch deep and overcook 'em and I'd still love them.

Yes, personal preference, some people prefer BG and others may not. I am still trying to figure out how to turn this into a food analogy.

Well sure...it's preference. Everybody likes their food prepared differently, yadda, yadda.

The difference is I like my ribs (and my chili) the RIGHT way.

The rest of ya'll are wrong, and I feel it's my duty to the human race to try and point you in the correct direction ;)

Don't paint with to broad of a brush, I agree with you. If you call it "chili" it better be chili. I have had a true competition batch of texas red and I am spoiled for life, I cannot replicate the flavor, texture, or heat, and I have just about given up on making chili because of my search for the holy grail of chili.
