FWIW, I am not a server, but I do run the register in a restaurant rather frequently, and when a server doesn't have change in their book, they'll come and break a bigger bill down with me. It is true that the five and five ones is somewhat SOP for servers, making it easier for guests to leave a tip, but also, it's more than entirely possible that the server didn't have a $10 bill, and that there wasn't one in the drawer at that exact moment. As for teaching simple math... you did get the correct amount back, just not in the denominational breakdown you were expecting.
