The more ideas get tossed around, the more I'm believing my thought that Sodexo or whoever has a "non-compete" in their contract with the university, keeping local restaurants and food trucks from setting up shop. It's too bad.
What is the food truck scene like in NW Ohio? Indy is crawling with them, but is also obviously a much larger metro area. Would BG be able to secure deals to have four or five set up every home game? (Love the scoreboard endzone idea. When/if the Doyt gets renovated, I hope that area is a point of focus.)
I get the quality control idea with local staples, but at some point, Myles is Myles, Pollyeyes is Pollyeyes. Sell it in a mostly-fresh state and it's still a winner. I don't know that any upgrades to food prep areas in a renovation would help those pizza shops, anyway. If an oven goes in, I doubt it would be a top-end pizza oven. But if Myles can get people to pay $4 or $5 for a large slice of cheese pizza, they're making $30-40 for a full pie. Even with peripheral costs for staffing and product loss, that's a pretty wide profit margin to this non-business major. When I was delivering at East of Chicago senior year, we had a setup at the tractor pull. Sent a couple hundred pizzas out there at the start of the day and they kept asking for more.

While this is a MAJOR embarrassment, it could be a blessing in disguise.
The concessions at ALL BG sports events have been horrible for YEARS.

I would hope the public embarrassment alone would mean a change in direction for food service at athletic events.
I love allowing local groups the opportunity to work our concession stands as fundraising events but the SODEXO employees really should be the people preparing all of the food behind the scenes. Those people are, or should be, trained to properly prepare what is served. The local groups should only be taking orders, handing out food, and taking payment. I really don't see Kingston standing for this kind of bad publicity. This is 100% controllable by the department.
This is one of many examples of outsourcing costing more than it saves. Toss them out and either use Chartwells (dining services) or have the athletic department run the operation.

Obviously it's not nearly what it is in larger cities, but it's starting to pick up in Toledo. There are quite a few decent BBQ places that have mobile units (We B Ribs, Po Mo's, Deet's is my personal fave). Rosie's & Ottawa Tavern both have food trucks as well. Swig does on-site catering, not sure if they have a truck or not. As I said, I don't know what the BEST solution is, but there is no way in hell that what Sodexo has been putting out is the BEST that can be done for concessions. They're garbage. I'd like to embrace local eateries if we could get them on board, but food trucks would be another good option. Nearly anything has to be better than what Sodexo has done.

Put in am elephant ear stand, cheese fries, maybe an Italian beef or Italian Sausage stand, pork-a-lean, etc. Those stands handle high volumes and pretty quickly at the tractor pulls. Put some of those stands along with maybe a 'generic cheese pizza' stand. Those would be an upgrade in what we have now.

ewwwww. Sorry, but those are not 'overly bureaucratized compliance measures'. John Tapper would kick some clown butt over brain-dead violations like those. No excuses.
What's the reason for not just giving the contract to Chartwells?

The problem with food trucks is they won't revenue share or pay a standard vendor fee. By nature they like to do it on the cheap- no property tax, small staff etc. Any third party vendor should be paying an upfront fee to get in the building and possibly and additional revenue share on product sold and in my experience with food trucks they will do neither.
