Sometimes I pity my little man for having to eat porridge all the time. He’s okay with rice but with no molars at the back yet, it takes longer for him to chew. I try to change his meals to something more unconventional sometimes so I make pancakes. Prior to this, I’ve always made the traditional pancake but he doesn’t seem to fancy it so much. I switched it up a bit by adding cornmeal to the mix and lo and behold I found the secret route to his taste buds. Needless to say, he gobbled it down…with or without molars. 🙂

For some reason, adding the cornmeal made the pancakes fluffier and softer. If feels like eating cornbread, only much denser. These corncakes aren’t just for kids, adults will like them very much too. I must admit, I didn’t know how to shoot pancakes. I tried different angles but somehow the colour just comes out a bit unappealing. I even searched Google to have some reference and there isn’t really a good pancake picture out there. Guess it’s not the easiest thing in the world to shoot. I didn’t want to flood it with syrup either cos that would just look too ‘oily’ in pictures. Even after selecting the best few, I still wasn’t really satisfied with the outlook. So I put the pictures though some effects and decided on these colours.

I like the picture with the effect better (right). It looks more rustic and reminiscent. ‘
CORNCAKES RECIPE
Yields about 6 small pancakes
Ingredients;
1/2 cup all-purpose flour
1/2 cup cornmeal
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 tablespoons honey
1 egg
Milk
Olive oil
Steps;
1. Sift the cornmeal and flour together in a bowl. Add the other dry ingredients; salt, baking soda, baking powder. Whisk it together.
2. Add milk gradually, try not to get too much lumps. Add your egg and whisk till incorporated. The consistency is that of thick cream. Whisk in your honey.
3. Heat a pan with about 2 tablespoons olive oil and ladle your batter onto the pan, 3 at a time but the quantity per-pan is up to you.
4. Eat with butter on top, maple syrup, ice cream, fruits or plain.
Note; If you wish to make more, just up the quantity of flour, cornmeal, milk and honey bit but I would not change the baking powder, baking soda and the salt unless you’re making like 30 or more pancakes, then you might have to change this part.

Well, my son is not so picky really….he even eats stuff I dun like, like dodol. But once in a while i got it rite somehow. 🙂

How much milk?
hi natalie, start with about 1/3 cup. Mix and check the consistency. If it’s too thick like cement paste, add more milk. It should be like thick cream where it flows down the whisk smoothly when scoop up the batter.
