
I was making roast chicken one night and did not check my pantry to see if I had enough ingredients for sides. I pulled out a single sweet potato. Sometimes stuff like this happen in the kitchen where you can’t figure out how things get to one itsy bitsy bit. So, mash it is then.

Sweet potatoes have their own distinct flavour. I might incur the wrath of a lot of people out there but I’m not a fan of putting salt on my sweet potatoes especially when roasting them. I don’t know why, I just don’t find they go together. For a mash however, I just used a pinch and used salted butter to up the flavour instead.
A sweet potato mash is a real treat and it is like a notch up in flavour town compared to ordinary mash potatoes. It definitely went well with my roasted chicken which I just seasoned with some salt, pepper and chopped rosemary. This could also be a real tasty baby food. Since my second one is going to be 5 months soon, I’m already thinking about the types of solids I want to start her of with.

My other favourite thing is grilled asparagus. No more boiling or steaming them, just coat them with some olive oil, salt and pepper and cook them on a hot grill. This brings out that great nutty flavour in asparagus that I think you would be able to achieve any other way.
Sweet Potato Mash
The cousin of the plain potato mash.
- 1 medium sized sweet potato
- 1 tablespoon butter
- 1 tablespoon cream cheese (room temp)
- salt
- black pepper
- Peel and cut the sweet potato to rough chunks.
- Steam the sweet potato till it’s fork tender.
- Place them in a food processor, while it’s still hot, add the butter and cream cheese, a pinch of salt and black pepper.
- Blitz till you have a smooth consistency, I like to leave a few bit of chunks here and there.
- Taste and adjust.

i have yet to make a roast beef dish, want to try so bad but hubby not a fan. But i do think i have a new favourite mash. 🙂
I like roasting the sweet potato with some garlic and then mash both together. Yum! Your dish is so healthy!
